Ingredients

  • 14 ounces extra-firm tofu, drained and pressed
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 1 bell pepper red or yellow, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 green onions sliced, for garnish
  • 1 sesame seeds toasted, for garnish

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the pressed tofu into 1-inch cubes. In a mixing bowl, toss the tofu cubes with cornstarch until evenly coated. This will help achieve a crispy texture.
  3. Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the tofu in a single layer. Cook until golden brown, about 3-4 minutes per side, turning occasionally for even browning. Transfer the crispy tofu to the prepared baking sheet and place it in the oven to keep warm while you prepare the stir-fry.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn it!
  5. Add the broccoli florets and sliced bell pepper to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp and vibrant in color.
  6. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sugar. Pour this sauce over the vegetables in the skillet and toss to coat. Cook for an additional 1-2 minutes until everything is heated through and well combined.
  7. Remove the crispy tofu from the oven and gently fold it into the stir-fried vegetables. Stir to combine, allowing the tofu to soak up some of the sauce.
  8. Serve the stir-fry warm, garnished with sliced green onions and toasted sesame seeds.
