Ingredients

  • 1 pound seitan, sliced into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (mixed colors for vibrancy)
  • 1 cup broccoli florets
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, fresh, grated
  • 1 cup snap peas
  • 1 tablespoon cornstarch
  • 1 cup vegetable broth
  • 1 tablespoon rice vinegar
  • 2 teaspoons sugar
  • 1 teaspoon red pepper flakes, optional, for heat
  • 2 green onions for garnish, sliced

Directions

  1. In a bowl, combine sliced seitan, soy sauce, and cornstarch. Toss until the seitan is evenly coated and set aside for 10 minutes to marinate.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated seitan and stir-fry for 5-7 minutes, until lightly browned and heated through. Remove the seitan from the pan and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add sliced onion and sauté for 2-3 minutes until translucent.
  4. Stir in minced garlic, grated ginger, and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.
  5. Add bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are vibrant and just tender but still crisp.
  6. Return the seitan to the skillet. Pour in the vegetable broth, rice vinegar, and sugar. Stir well to combine and allow the mixture to simmer for an additional 2-3 minutes until heated through and slightly thickened.
  7. Serve hot, garnished with sliced green onions.
