Recipe Scaler: How to Scale a Recipe Up or Down (Formula, Converter and Baking Tips)

Most recipes are written for four or six people. Real life isn't. Sometimes you're cooking for two, sometimes for twenty, and sometimes you're a food brand turning a kitchen recipe into a 200-unit batch.

To scale a recipe, divide the servings you want by the servings the recipe makes, then multiply every ingredient by that number. The math is simple. The traps are eggs, seasoning, baking and pans. This guide covers all four. To skip the math, use our free recipe tools.

What is the recipe scaling formula?

Scaling factor = servings you want ÷ servings the recipe makes

New amount = original amount × scaling factor

  • 4 servings → 10 servings: 10 ÷ 4 = 2.5
  • 6 servings → 2 servings: 2 ÷ 6 = 0.33
  • Halving: 0.5 · Doubling: 2

How do you scale a recipe, step by step?

  1. Work out the scaling factor.
  2. Convert to weight if you can. Grams scale cleanly. Cups get awkward (what's 0.33 of ¾ cup?).
  3. Multiply each ingredient.
  4. Round to amounts you can measure. 0.375 cup is 6 tablespoons.
  5. Adjust seasoning by taste, not by multiplication alone.
  6. Rethink the pan and the cooking time. Neither scales in a straight line.

How do you halve a recipe?

Halving is where awkward fractions show up:

Original Half
1 cup ½ cup
¾ cup 6 tbsp
⅓ cup 2 tbsp + 2 tsp
¼ cup 2 tbsp
1 tbsp 1½ tsp
1 tsp ½ tsp
1 egg about 25 g beaten egg (beat one, use half)

How do you double a recipe?

Doubling is easier, but watch three things:

  • Salt, spices and heat can taste stronger in big batches. Start at about 1.5× and adjust to taste.
  • Pan crowding. Twice the meat in the same pan steams instead of browns. Cook in batches.
  • Cooking time. A double batch in a deeper pot takes longer, but not twice as long.

Can you scale baking recipes?

Yes, with more care. Baking is chemistry:

  • Weigh everything. It's the single biggest improvement for scaled baking.
  • Leavening: large scale-ups may need slightly less baking soda or powder than a straight multiple.
  • Pan size and depth matter more than quantity.
  • Check doneness early, then add time in small steps.

How do you scale a recipe to a different pan size?

Scale by area, not by diameter:

  • Round pan area = 3.14 × radius²
  • Square or rectangular pan area = length × width

A 9-inch round is about 63.6 sq in. A 10-inch round is about 78.5 sq in. That's a factor of about 1.23, not 1.11.

How do you convert cups to grams while you scale?

Cups measure volume, and grams measure weight, so the conversion depends on the ingredient. A cup of flour weighs much less than a cup of sugar. Use a published ingredient weight chart. Volume equivalents don't change:

  • 1 cup = 16 tbsp = 48 tsp
  • 1 tbsp = 3 tsp
  • 1 US cup ≈ 237 ml

Scaling from kitchen recipe to production batch

For food brands turning a recipe into a product:

  • Convert everything to weight.
  • Scale to batch size using the scaling factor.
  • Run a test batch and measure the real yield after cooking losses.
  • Recalculate the factor from real yield, not the theoretical one.
  • Cost it with the free food cost calculator, then add packaging and labor per unit.

Print it or publish it

Once it's scaled, put it on a free recipe card template and print it at 4×6, 3×5, Letter or A4. Need nutrition for the new serving size? Use the free recipe nutrition calculator.

Common questions

Divide the servings you want by the servings the recipe makes, then multiply every ingredient by that number.

How do you cut a recipe in half?

Multiply everything by 0.5. For an odd egg, beat it and use half.

Can every recipe be doubled?
