Ingredients
- 1 pound seitan, sliced into strips
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced (mixed colors for vibrancy)
- 1 cup broccoli florets
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, fresh, grated
- 1 cup snap peas
- 1 tablespoon cornstarch
- 1 cup vegetable broth
- 1 tablespoon rice vinegar
- 2 teaspoons sugar
- 1 teaspoon red pepper flakes, optional, for heat
- 2 green onions for garnish, sliced
Directions
- In a bowl, combine sliced seitan, soy sauce, and cornstarch. Toss until the seitan is evenly coated and set aside for 10 minutes to marinate.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated seitan and stir-fry for 5-7 minutes, until lightly browned and heated through. Remove the seitan from the pan and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add sliced onion and sauté for 2-3 minutes until translucent.
- Stir in minced garlic, grated ginger, and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.
- Add bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are vibrant and just tender but still crisp.
- Return the seitan to the skillet. Pour in the vegetable broth, rice vinegar, and sugar. Stir well to combine and allow the mixture to simmer for an additional 2-3 minutes until heated through and slightly thickened.
- Serve hot, garnished with sliced green onions.
